These have always worked well for me Chris...

Banana Loaf

125g margarine
200g sugar (1 cup)
250g self-raising flour (2 cups) (you can use plain flour with 10ml (2tsp) baking powder
2 eggs
4 mashed bananas (well ripened)
5ml (1tsp) vanilla essence

Cream margarine, sugar & eggs together until light & fluffy; add eggs one at a time beating well after each.
Sift flour and fold in; add bananas and mix thoroughly.
Spread mixture into a greased loaf tin (Spray 'n Cook is fine).
Bake for 45 minutes at 180 degrees C (350 degrees F)
Turn out to cool

Crustless Milk Tart

500ml (2 cups) milk
7,5ml (1.5 tsp) baking powder
15g (1 Tbsp) melted butter
60g (1/2 cup) flour
100g (1/2 cup) sugar
2 eggs
5ml (1 tsp) vanilla essence

Beat egg yolks, sugar and butter together.  Add milk and flour slowly until well mixed.
Fold in stiffly beaten egg whites and vanilla.
Pour into buttered dish and bake at 180 degrees C (350 degrees F) till set.
Sprinkle over cinnamon sugar when cool.

Hope they work for you!

Dont  forget  to add  the special  herb to  the banana loaf ..  Paul  brought  such a banana loaf  home when he used to work at CTFM .. long hours  .. so he  could  not communicate to us  that it was a " special "  banana  loaf  made for him  by the girls at work ...  next morning  I'm running late for  work  ... mm what to  have for  breakfast .. "  mmm  how  kind " a  banana loaf .. nice and filling .  buttered  3  thick  slices  ..    chewed up  and off to work .. meeting  time 09: 00  me sitting  nice and calm .. suddenly  .. hey  is this my chair  moving   or is  the table moving .??. oops  I can feel my  smile muscles  becoming overactive ..  I  need stability  ..  chair / table really feeling  sort of  wonbly and movey now ..  solution .. hang onto  under ledge of  table ..  ahh  some  stability .. wish  this  stupid  grin  would just  disapear  from my  dial ...  all questions  answered in  cool  calm  manner  slowly ...  carefully ..  phew .. know this  feeling  .. same  as  when one  brews  a tea  with  that special herb .. damm Ive been  hijacked ... !!   the  rest of the day  slowly  came   together ...   the  herb   dont  forget the herb  Cherry ...

laughpoint Nice, Sandy.  Took the edge off work, hey.
Wonderful, wonderful herbs. And they ask me why I'm practicing herbal medicine?

Had a policeman in the chair this morning - he offered me some of this specific banana loaf herb, I told him I wanted it for a pain tincture. (Really, I do, I promise it's for the tincture!)
