Banana Loaf
125g margarine
200g sugar (1 cup)
250g self-raising flour (2 cups) (you can use plain flour with 10ml (2tsp) baking powder
2 eggs
4 mashed bananas (well ripened)
5ml (1tsp) vanilla essence
Cream margarine, sugar & eggs together until light & fluffy; add eggs one at a time beating well after each.
Sift flour and fold in; add bananas and mix thoroughly.
Spread mixture into a greased loaf tin (Spray 'n Cook is fine).
Bake for 45 minutes at 180 degrees C (350 degrees F)
Turn out to cool
Crustless Milk Tart
500ml (2 cups) milk
7,5ml (1.5 tsp) baking powder
15g (1 Tbsp) melted butter
60g (1/2 cup) flour
100g (1/2 cup) sugar
2 eggs
5ml (1 tsp) vanilla essence
Beat egg yolks, sugar and butter together. Add milk and flour slowly until well mixed.
Fold in stiffly beaten egg whites and vanilla.
Pour into buttered dish and bake at 180 degrees C (350 degrees F) till set.
Sprinkle over cinnamon sugar when cool.
