Here at SPar we just received, 95 fresh Snoek, Caught yesterday at Luderitz.... Selling for N$50.00 each.... they look awesome and large.... guess I will be braaaaaaing a snoek this afternoon..... maybe I should have a dop with it.....

"Fish : MY SNOEK BRAAI

BRAAI SNOEK ON GRILL: 1med-large fresh snoek
GARLIC MARINADE: 6-8 large table spoons mayo
3 large table spoons fine garlic paste
Salt, pepper
SWEET MARINADE: More or less 6 large table spoons apricot jam (fine)
Tomato sauce
Regular chutney
BBQ spice
Sugar
1tsp masala
METHOD
Clean snoek & salt lightly. Mix marinade 1 and 2 in separate jars. Using a basting brush, baste the snoek with marinade 1, place on grill and on the coals. Turn the grill 1-2 times while basting. Remove snoek and baste with marinade 2 while braaing. Turn the grill 1-2 times while basting. It should be lekker moist.
Remove snoek and serve with garlic bread and salad.
ENJOY!!!
Aah Mike, now you've got my taste buds salivating - nothing better than a braaied snoek done the west coast way - with apricot jam/garlic sous braaied till the skin bubbles..........saddens my heart to see 50 bucks is the going rate nowadays!!!!!!!!! okay, now i know this was like 20+ years ago but kenny aitken, myself and a bunch of others, on our many many weekend trips to mcdoug's, used to go sit at the harbour and wait for the skuitjies to come in and buy snoek before they'd even had time to off-load - the fishermen would pass them to us straight from the boats - get this, FOR R2 A SNOEK...........now if that alone doesn't make anyone want to go back to the "good old days".........
thanks to family connections tho' i still get to have my west coast snoek every now and again when lance decides to braai - he knows me and seafood and always does the old snoekie for me with the above mentioned sous.....thanx boet xoxo
Recipe for the Snoek/Mike:
make a tinfoil tray that you lay the snoek onto then spice with fish spice (vlek snoek)
Then blob mayo over the top and smooth out over the fish
take gratted cheese and top the mayo with it
put on fire (on tinfoil tray) and leave as is untill cheese melts, once cheese has melted -
snoek is then done, don't have to fiddle and faf with it, so while waiting you have more drinking time...yeeeehaaaa!!!
