Okay Guys - here is a recipe for the most delicious bread you will ever taste - and as an added bonus it is healthy!
DRY INGREDIENTS:-
• 200gr mixture of Wholemeal; pinhead; bran; wheatgerm (50gr each)
• 1tsp bread soda
• Pumpkin; sesame and sunflower seeds (small quantity of each)
WET INGREDIENTS:-
• 1 egg
• 1 tablespoon black treacle
• 1 tablespoon olive oil
• ½ pint buttermilk
1 tablespoon is 3 tea spoons
METHOD:-
Grease and flour a bread tin
Mix all the wet ingredients in a bowl; mix all the dry ingredients in a seperate bowl - and then mix the two lots together..........pour into the bread tin and bang into the oven.......wait..........wait...........wait.
180°C oven; gas mark 6;
30 minutes in a pre heated oven – stick with a skewer or sharp knife – must be dry when removed; not sticky or damp.
Once cooked; remove from the tin – (optional - wrap in a tea-towel )and allow cool.

Life is too short for Bad Coffee and bad Bread.
IN Oranjemund, I used to make bread for the family, Corn bread, rye bread, russian blackbread, health breads and a whole load of other ( Sweetpotato, tomato & cheese to name a few)
Since being in Cape Town, I have not had the opportunity ( Electric stove instead of the large gas stove I bought and took back to Omd)
My daughters still want me to make the Bacon & blue cheese bread I used to make when they were younger.
Try that some time, it comes out of the oven cools a little gets a bit of good butter & then it disapears - Really good
Clive, how about a recipe or two from you? It will be great for the board, and a nice place to share one of the nice things in life - food!
Don't worry if it's not a health bread recipe, we'll just throw in an exercise regime on the next post to balance out!

Never wrote any recipes down, just used my own judgement with quantities
( now I know why I had eight bread tins)
As long as I had the basic ingredients bread flour, a yeast that worked ( some of the SA yeasts were not that great) and what ever else I was adding I would make bread.
Have used Molasses, treacle, strong black coffee, Rye, Barley and even "Mohango" that is Millet which the Ovambo's grow, and is their staple, in making different breads.
Yes I followed recipes when I first started out, and still would if I want a specific type of bread.
For a Bacon & blue cheese bread , make up as for a standard white bread and before the final Rising work in pieces of cooked bacon and blocks of blue cheese, allow to rise, Paint top with an egg & milk wash pop into the oven bake & enjoy.
I will try to find some of the books I used and drop a few recipes if any one is interested.
Maybe it will give me the incentive to start again.

Will be looking for supplies this saturday and trying to find the baking tins, hav'nt made bread since leaving Oranjemund. The general price & quality of bread seems to be making it worthwhile to bake again.
I remember the Bakery in Oranjemund, Bertie Roetgen the German baker showed us kids around. Also how they made the various loaves, one of the breads they made for the Hostels was a small Brown loaf made with Peanut Butter added.

@ Mike S - BEER BREAD recipe: (Easiest one - I have more, will post another later, but if you're looking for a beer recipe this early in the morning, I take it you're in a hurry!)
Ingredients:
750 ml Self-raising flour
250 ml Wholewheat flour
2 ml Salt
10 ml Sugar
75 ml Chopped parsley
340 ml Beer (at room temperature)
Sesame seed
(Can be added for variation: chopped herbs, crushed garlic or cheese)
Method:
Mix dry ingredients and parsley. Add beer and mix until it forms a sticky dough. Put in greased 20x9x7 cm pan, level out on top and sprinkle with sesame seeds. Bake at 180 degrees C for 70 minutes. Turn out on wire mesh and let cool. It doesn't go brown, but has a nice crust and can be toasted!
What kinda beer - are we looking at lager here or what?

Russian Black Bread - with options depending on what tastes you have
you can add the vinegar if you want ( I dont as it gives it a bit of a bite)
You can use the cocoa powder - I use melted chocolate smoothed with melted butter
I choose to leave out the caraway and fennel seeds and replace them with half a cup of raisens and or nuts.
INGREDIENTS:-
1 Cup Strong Black Coffee
Half Cup of water
2 Table spoons Corn or Maple syrup
2.5 Cups Bread flour
1 Cup Rye flour
1 Teaspoon salt
2 Table spoons Brown sugar
2 Teaspoons dry activated yeast
100 g Dark Chocolate
2 Table spoons butter
Optional ingrediants:
1 Table spoon caraway seeds
Quarter tea spoon fennel seeds
2 Table spoons Vinegar ( preferably Cider)
OR
Half a cup of raisens and or nuts.
METHOD:-
Make up the yeast with A little sugar and half cup luhe warm wate, make sure it is working before proceeding
Mix all the wet ingredients in a bowl
Melt the chocolate and butter make sure it is cool enough before thinking of adding it to the bread mix
Mix all the dry ingredients in a seperate bowl - and then knead the two lots together slowly working the bread
add the cool buy Melted chocolate and butter, with your choice of nuts & or raisins.....or the Caraway & or fennel.
Leave covered in a warmish place, allow to rise once, knock it back and place into Greased (or sprayed) bread tins.
Allow to rise in the tin when doubled in size, paint with an egg & milk wash, put the tins into the oven.
Pre-heat oven to 180°C oven or gas mark 6 after 35 minutes in oven check with a steel skewer or knife
make sure that the skewer comes out dry & not sticky when removed.
Remove from tins & Place on wire rack to cool.

all sounds really interesting stuff.......but im not a bread lover or a cook...........However....one of the best things i ever tasted was a meal in sierra leona made by an italian lady....it was called Jollaf Rice.....and it had chicken....has anyone ever heard of this......or ever made it......and know the recipe...cause i would try that if i knew how to make it....or if anyone already makes this meal.......INVITE ME ROUND FOR DINNER PPLLLLEEEASEEEEE

Found you a Jolloff Rice recipe Bev is this it?
Joloff Rice Ingredients
1 tsp Vegetable oil
1 Onion; roughly chopped;
500 g Tomatoes; roughly chopped
600 ml Water; (1 pint)
125 g Peas; frozen, defrosted
1 pk Cherry bomb chillies
250 g Round grain rice
100 g Frozen cooked tiger prawns;
1 ts Curry powder
Salt and freshly ground
Heat the oil in a heavy based saucepan over a moderate heat, add the tomatoes and chillies, reduce the heat to a low setting and cook for 5 minutes until soft and pulpy. Blend the tomato mixture in a food processor or liquidiser. Pass the mixture through a fine sieve into a clean bowl. Place the rice, curry powder and onion into the saucepan and return the pan to the heat, dry fry the ingredients on a moderate heat for 1 minute. Pour the water onto the rice and stir to remove the rice from the base of the pan. Cook for 10 minutes, stirring occasionally. Add the puree of tomatoes and chillies to the rice then add the peas and prawns and cook for a further 5 minutes. Season the rice and serve.
I always cook well .. but cook by instinct and taste .. never measure .. just do by good memory .. and of course put lots of love into the food .. most important .. it increases the taste and nutritional value ..
And even if you dont get it right the first time, I just try it over again until it taste right.
Baked a Christmas cake once, tried a recipe but realy messed it up, soaked 1 Kilo of raisins, a kilo of sultanas and various nuts cheries & dried fruit, used a bottle of brandy and ended up with so much mixture I had enough for three cakes.
Put the first one in the oven ( the folks were away on holiday) and because it was supposed to bake for so long, when to the Pub ( spotrsmans progressed from there to the gun club) when I got home there was smoke & a blackened & burnt cake.
Ended cutting off the top, the bottom and about two inches around the edges, finally the anticipated Christmas cake fitted into a large saucer & looked more like a large bun.
If you remember Lillian Gray, when I told her the storey she kindly offered to bake the rest of the mixture ( Which turned out to be quite nice) Lesson learnt and I didnt bake for quite a while after that.
Now making an apple struddel, is another storey on its own.
Apfel strudel .. John and i went to a colleagues house for " Austrian Dinner " Fritz is austrian .. and he did the whole authentic spread for us .. a soup with lots of kummel ..the smoked pork and tatao dish also so damm yummy ( again Kummel ) and the the "piece de resistance" he went to the bother of making this huge Strudel .. made the pastry et al .. Aah !! suuch good memory ...
Sandy, the one I made, was so thin it covered the whole kitchen table & when filled & rolled up was too big to fit in the CDM ovens.
Had to cut it in half & coil it round to make it fit the oven. ( ended up with Two, one for work & one for home)
As I said, I needed some inspiration to start again.
Its been raining, its cold outside, the log fire is burning and its real cosy.
Deceided to test the oven (NEVER baked in an electric oven before, too dam used to gas)
Any way, made some Corn Bread and some Bacon & Blue cheese bread.

WIll try the oven again, ( dont think the Eskom electricity was up to scratch) not so close to Lunch time.
Aw gee Clive! I have a gas oven that SUCKS - just doesn't give proper temperature reading so bread baking is disastrous! You're welcome to pop in anytime - bread or no bread but it's always a welcome sight! :-)
