Heritage day in SA

Tip for Mike to score brownie points

Braaied pineapple with coconut cream

Ingredients
250 ml cream
80 ml toasted coconut
2 large pineapples, quartered (with stalk end intact)
honey for drizzling
60 ml chopped cashew nuts

Method:
Mix the cream and toasted coconut well and set aside.
Braai the pineapples lightly over the coals until browned in places.
Cut the flesh from the skin and cut into chunks.
Drizzle with honey and sprinkle with the chopped nuts.
Serve with coconut cream.
