I'm sure you make better Omlettes now than you did at 20 Michael. Probably didn't cook them long enough..but you thought they were great. Now that you've added the cheese filling you reckon this is a realy good Omlette...wait the time will come when you'll realize you should have added ham and mushrooms as well.
